Seven or eight years ago a good friend of mine introduced a few of us to a hole in the wall eating place just outside of Oxford, Mississippi. It was the absolute best sandwich I had in a long time. The atmosphere was that of the Jerry Springer show to say the least. They have every type of chicken strip sandwich you can every imagine. Even though I am in Oxford several times a year with work, I could never figure out how to get back to the place. That is until last month, I am driving down the main strip in Oxford and look over to see Coop DeVille. The restaurant has opened up a location in Oxford. After finishing our event in Oxford late one night, we decided to make a quick stop before heading back to Memphis to try it out. It was just as good as I had remembered and the exact same atmosphere. If you are ever in Oxford, Mississippi, don't miss the experience and the good food.

Investment that Matters.
These are two of best kids on the planet. Yes, I am partial because they are mine, as any dad would be. Macie will be turning five in November and Caleb will be three next April. Time is flying by, it seems like they were both just born. As a father and husband, I have grown to understand that my relationship with my wife and children should be at the top of my priority list. Only second to our own spiritual and physical health. What better legacy could I possibly leave than to have invested my life and the wisdom God has blessed me with into them for his glory. My hope and prayer is to invest in my children with selfless love, just as God has done for us. Nothing could be more important than to point your children towards a life of purity and righteousness found in Christ and through the relationship he has modeled for us.

Books? Why Read when you can Listen?
Just over two years ago I discovered something that has helped me greatly. Sitting down to read a book is just not my idea of fun. If you are like me, you feel my pain. What I do consider fun is using my time driving, working out, and other idle time to listen to the books I would like to read. Depending on your learning style you may even be able to comprehend the material better than if you were to read through. Audio books have given me the ability to listen to great books and advance my learning on many subjects far faster than I could have sitting down to read. Check out audible.com for more details.

What is in store for Tomorrow...
Tomorrow night is a huge night for Union University, hosting it's annual scholarship banquet. Last year the event featured former first lady, Laura Bush. Approximately $600,000 was raised through the banquet last year and more than $5 million has been raised for student support through the history of the Scholarship Banquet. This year will be a night not to miss with Former British Prime Minister Tony Blair as the guest speaker.
I have had the privilege for several years to be involved in production of the event and to be the audio engineer for the evening. Behind the scenes this year, Chris Bennett Productions and Jullian Willumsen of Bluesland Films have a great set design planned to fit the occasion. The company I work with, Tennessee Concert Sound, will be providing audio support.

My Wife Loves to Cook
Cinnamon Roll Pizza
One of my favorite things that my wife makes from time to time is Cinnamon Roll Pizza. It is INCREDIBLE. It is very easy to make and worth the effort. My wife is the best. See below for the details.
Ingredients
4 Tablespoons cold butter, cut
into cubes

1/2 Cup packed brown sugar
13 oz pizza dough of choice
4 Tablespoons room
temperature butter
1/2 Cup packed brown sugar
1 1/2 teaspoons ground
cinnamon
1 Cup powdered sugar
4-5 Tablespoons heavy cream
1. Preheat oven to 350 degrees F. Spray 12" pizza pan with cooking spray and layer the pan with butter cubes and brown sugar. Gently place dough into pan over butter and brown sugar then spread butter over top of dough. Layer with brown sugar and cinnamon. Bake for 25 minutes or until pizza crust is cooked through. Let cool for 10 minutes so butter and brown sugar have set. Cut into wedges.
2. Place powdered sugar and cream into mixing bowl and stir until smooth. Drizzle over warm slices of pizza and serve.
